 STIR-FRIED BEEF WITH SESAME SAUCE


Serves four

Ingredients

1.450g/1lb beef sirloin or fillet, cut into thin strips

15ml/1tbs groundnut or sesame oil

2 garlic gloves, finely chpped.2 red Thai chilies, seeded and finely chopped.

7.5ml/1 1/2 tsp sugar

30ml tbsp sesame paste

30-45ml beef stock

sea salt and ground black pepper red chili strips to garnish

1 lemon, cut into quarters, to serve for the marinade.

15ml groundnut oil

30ml tuk trey

30ml soy sauce

1. In a bowl, mix together the ingredients for the marinade. Toss in the beef, making sure it is well coated. Leave to marinate for 30mts.

2.Heat the groundnut oil in a heavy pan. Stir in the garlic and chilies and cook until golden and fragrant. Stir in the sugar. Add the beef tossing it around the Pan to sear it.

3.Stir in the sesame paste and enough stock or water to thin it down. Cook for 1-2 minutes making sure the beef is coated with sauce. Season with salt and pepper, garnish with chili strips and serve with lemon wedges.
